2 eggs, beaten
1 and 3/4 cup skim milk
1/4 cup canola oil
1/4 cup applesauce
1 tsp vanilla
1 cup whole wheat pastry flour
1/4 cup flaxseed meal
1/4 cup wheat germ
1/4 cup all purpose flour
4 tsp baking powder
1 T sugar
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. cinnamon

Directions:

Whisk together the eggs, milk, oil, applesauce, and vanilla. Stir in all the remaining ingredients. Add more milk to thin if needed. Spray waffle iron with non stick cooking spray before cooking. These seem to take longer to be done than regular waffles.

These are filling and yummy! When I told Cameron the ingredients, he was skeptical, but as soon as he tried them, they became his favorite waffles. I make a double batch on Sunday, freeze the leftover waffles, and then reheat them in the toaster oven for breakfast during the week.
