Ingredients: Crumb Crust: 1 3/4 c. Graham Cracker Crumbs 1/3 c. sugar 1/2 c. melted butter.
Filling: 3 8oz. pkgs. cream cheese 2 c. sugar 4 eggs 1 1/2 tsp. vanilla 2 tsp. lemon juice (optional).
Topping: 1 pt. sour cream 1/2 c. sugar 1 tsp. vanilla

Directions:Crust: Mix together and press 2 inches high on sides and on the bottom of a 9" tubeless spring from pan.
Filling: (have ingredients at room temp.) Beat cream cheese well, adding sugar slowly. Continue beating. Blend in 1 egg at a time. Add vanilla and lemon juice. Turn mixer to medium speed and beat until well blended, appx. 5 to 10 minutes. Pour into crust lined pan and bake until set @ 350º for appx. 45 to 55 minutes. When done, cool appx. 15 minutes before adding topping.
Topping: Mix together and pour over filling. Bake 7 to 10 minutes @ 425º .. DO NOT REMOVE FROM PAN UNTIL CAKE HAS BEEN CHILLED. Refrigerate appx. 24 hours before serving. |
