Sauerkraut Surprise Cake Recipe

1/2 c. margarine
1 1/2 c. sugar
3 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. cocoa
1 c. water
1 - 8 oz can (1 cup) sauerkraut, drained, rinsed and finely cut

In bowl cream margarine and sugar till light. Beat in eggs one at a time, add vanilla. Stir together flour all other dry ingredients. Add to creamed mixture, alternating with water. Stir in sauerkraut. Grease 13x9x2 pan and bake at 350 for 35 to 40 minutes.

Frosting to go with cake:

Sour Cream Chocolate Frosting
Melt 1 - 6 oz pkg semi sweet chocolate. Add 4 tablespoons margarine over low heat. Remove from heat, blend in 1/2 cup dairy sour cream, 1 tsp vanilla, 1/4 teaspoon salt. Add 2 1/2 to 2 3/4 cups powdered sugar. Beat well.
