1 onion, chopped
2 T chopped celery
2 T chopped pepper
1 t Worchestershire sauce
1 c tomato juice

Cut 1 ½ lbs thin round steak into 6 pieces. Dredge with flour mixture (1/4 c flour, 1 t salt, 1 t pepper).

Pound with meat pounder. Brown slowly in hot oil. Slip rack under meat and add ingredients listed above.

Cover tightly and cook 40 minutes over low heat. Stack meat to one side of skillet. Add
6 potatoes, quartered.

Cover tightly and cook 1 hour. Remove meat to platter with a slotted spoon so tomato sauce drains back into skillet. Heat either 3 cups canned limas or 2 ½ cups green beans. Serve in bowl with tomato sauce.
