Chicken Parmesan Recipe

4-6 boneless chicken breasts,
Italian seasoned bread crumbs,
1 egg and 2 Tbsp. milk beaten together
1 jar of your favorite spaghetti sauce
Mozzarella and parmesan cheese
Hot cooked spagetti or fettucine
Olive oil for frying (about 1 inch worth in your frying pan)

Preheat oven to 350º. Prepare a 9x13 pan (I use a foil one for easy clean up) by spreading about 1/2 the spaghetti sauce in the bottom of the pan.

Dip the chicken into the egg/milk mixture and then roll in the breadcrumbs, covering thoroughly. Brown both sides in olive oil over med. high heat. Transfer to the baking pan after they are browned on both sides.

Pour the rest of the sauce over the chicken and bake for 20 minutes. Top with as much mozzarella and parmesan cheese as you like and continue baking until cheeses are melted, about 5-10 minutes. Serve with pasta.

Sometimes I pound the chicken thin or cut it horizontally to make thinner cutlets. It's great either way, but you can cut the baking time in half for thin ones and they make great leftover sandwhiches.

The sauce bakes on making these so good, but there's enough sauce in the bottom of the pan to put on your pasta. Be sure to olive oil; it's the key to great taste.
