1 c. sugar
1 c. light corn syrup
1 c. heavy cream
1/4 tsp. salt
2 T. butter
6 T. evaporated milk
2 tsp. vanilla

Directions:
Directions:
Combine sugar, corn syrup, cream and salt in a heavy saucepan. Place over a low heat and stir until the sugar is dissolved. Cook to 232º (very soft ball); stirring occasionally. Add butter and evaporated milk alternately a little at a time to prevent scorching. Continue cooking to 242 - 244º (very firm ball), stirring constantly to prevent scorching. Remove from heat and add vanilla, stirring only enough to blend. Pour into a depth of about 3/4" in oiled pan. Do not scrape the bottom of the cooking pan.

When caramels are firm, cut with a sharp knife into 3/4" squares and wrap in saran wrap. May be coated with chocolate if desired.
