1/2 bunch fresh asparagus
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup sliced mushrooms
4 eggs
1 cup milk
6 oz grated sharp cheddar cheese
salt
pepper
nutmeg

Directions:
Directions:
Cook asparagus until tender. Cut into bite size pieces and place on bottom of pie plate that has been brushed with olive oil. Cook onions, peppers, and mushrooms in olive oil. Cool in medium bowl. Add beaten eggs, milk, 3 oz cheese and salt, pepper and nutmeg to taste. Pour into pie plate over asparagus. Cover with remaining cheese. Cook at 375º for 50 to 60 minutes.
