3 eggs,
2/3 C sugar,
1 C light corn syrup,
2 T butter, melted,
1 tsp vanilla,
1 1/2 C (7 oz) macadamia nuts, coarsely chopped,
1 unbaked 8" pie shell.

Directions:
Directions:
Preheat oven to 325º. Beat eggs till foamy with electric mixer, blend in sugar, corn syrup, melted butter, and vanilla. Fold in nuts. Pour mixture into pie shell. Bake 55-60 minutes. (If nuts are unsalted, add 1/2 tsp salt to above ingredients.

A favorite of mine! Prepare pie crust & nuts in advance. Macadamias may need to be chopped by hand; food processor will chop it too fine.
