1-28 oz. bag of O'Brien Hash Brown Potatoes
1/4 tsp. pepper
1 pound bacon cooked and crumbled
2 T butter
1/2 tsp. garlic salt
1 can of cheddar cheese soup
12 eggs, lightly beaten
2 cups shredded cheddar cheese

In a large skillet prepare hash browns according to package directions. Sprinkle with garlic salt & pepper. Put in greased 2 1/2 quart casserole dish top with soup. Set aside 1/2 cup of bacon crumbled; sprinkle remaining bacon over soup. Scramble eggs until just set. Spoon over bacon. Sprinkle cheddar cheese with 1/2 cup of bacon over top. Bake at 350 20-25 minutes until cheese is melted. º

I make this every year for our Christmas Eve brunch with Harold's cousin. Their son always takes all that is left home with him to eat later. It is really good and very filling - I serve it with muffins and fruit when I make it for home. Psalm 139:3, 13-16
