6oz brown sugar
4oz margarine
8oz crushed pineapple
12oz mixed fruit, with a few cherries
a few drops of almond essence
8oz self raising flour
2 eggs beaten
Directions:
Directions:
Melt the brown sugar and margarine in a large pan.

Add the crushed pineapple (but remove 1 tbsp. of juice and discard.

Stir in the mixed fruit, cherries, almond essence, flour and eggs.

Bake in a greased 8 inch (lined) tin at 150ºC (300ºF) gas mark 2 for 2 1/2 hours, or until skewer inserted into centre comes out clean.
