Dutch Pancakes Recipe

2 eggs
1 T. sugar
1/2 tsp. salt
1 tsp. vanilla
About 2 c. milk
1 c. flour
cube of butter

Directions:
Directions:
In a blender, mix the eggs, sugar, salt and vanilla. Next add enough milk so batter rises to the 2 cup line on the side of your blender. Blend again. Add the flour and blend again. Use a small frying pan on medium heat on stove (we usually double this recipe and have two pans going at once to keep up with our kids' demands :>). Butter it good and pour in the batter until it just covers the pan (more if you like them thicker) flip them over once they start to bubble. You need to check to see they are light brown underneath. Brown this side also. Once out of the pan, butter them and sprinkle sugar on top and roll them up like a crepe. Can also serve with syrup like traditional pancakes. (This amount makes about 8 pancakes, so double for more)

The kids love these! I can remember always asking for them every time I stayed at my grandma's house growing up, so it's fun to carry on a family tradition! They're quick and easy too, only 2 dishes to wash :>)
