1 garlic clove
1 box of salted butter
1 tablespoon extra virgin olive oil
1 box chicken stock
6 bags baby organic spinach
1 box of frozen phyllo dough (thaw in refrigerator overnight)
3 large tubs of Athenos feta cheese
1-2 cups of parmesan/romano cheese mix

Directions:
Saute chopped garlic in 1 tablespoon butter and 1 tablespoon extra virgin olive oil in large pan. Add 1 box chicken stock.

Lightly sauté spinach one bag at a time until all bags are wilted and barely cooked. Drain in a colander and set aside.

Melt 1 stick of butter in microwave. Layer one-half of a box of phyllo sheets in an olive-oil greased lasagna pan one or two at a time, brushing melted butter between sheets.

Mix feta and parmesan/romano cheese in drained spinach. Spread evenly over layered phyllo.

Layer the rest of the phyllo sheets over the spinach. With a sharp knife, carefully cut into squares. If you are using a foil pan, make sure not to cut through the pan! Melt 1 stick of butter in microwave, and pour evenly over top.

Cover with foil and bake in 350 degree oven for approximately 45 minutes. Remove foil and bake until golden brown (15 minutes).
