1 pound skinless chicken breast cut in strips
1/3 cup corn starch
1/4 cup vegetable oil
1/2 teaspoon each of tarragon & thyme
1/4 teaspoon pepper, ground
1 cup sliced scallions or green onions
2 cup chicken broth
3/4 cup Holland House cooking sherry
1 cup sliced mushrooms
1 pint cherry tomatoes, halved
White rice

Directions:
Directions:
Dredge chicken in corn starch. In large skillet brown coated chicken in the vegetable oil. Stir in seasonings and scallions and cook an additional two minutes. Add broth and sherry. Cover and simmer for ten minutes. Gently stir in mushrooms and tomato halves and simmer an additional five minutes. Serve over white rice.
