1/2 c. sugar
3 tbsp. cornstarch
1 1/2 c. orange juice
1/4 c. lemon juice
1 tsp. grated lemon rind
6 c. assorted fresh fruit, cut and drained
Cookie crust:
1/4 c. butter
1/4 c. sugar
1 egg yolk
1 c. flour
Whipped cream or ice cream

Directions:

In saucepan mix sugar and cornstarch. Gradually stir in orange juice mixing until smooth. Stirring constantly, bring to a boil over medium heat; boil 1 min. Remove from heat; stir in lemon juice and rind. Cool completely. Fold in fruit. Turn into cookie crust; chill 4 hours.
Cookie crust: Mix softened butter, sugar and egg yolk. Mix in flour until crumbs form. Press firmly into 9 in. pie pan. Bake at 400º for 8 min. or until edge is browned. Cool before filling. Serve with whipped cream or ice cream.
