200g / 8 oz Sponge Fingers
300ml / 10 floz Strong Black Coffee
400g carton Fresh Custard
Brandy or Tia Maria
250 g / 9 oz Mascarpone Cheese
145 ml / 5 floz (lightly Whipped) Whipping Cream
Cocoa Powder

Pour the Strong Black Coffee and Liqueur into a jug and stir

Arrange half the sponge fingers in the bottom of a deep glass bowl & pour over half the coffee mixture, so that the sponges are well soaked.

Allow to stand for 10 minutes

In a separate bowl add the Custard to the Mascarpone Cheese, and beat together until smooth/ spread half over the sponge fingers.

Dip the remaining sponge fingers into the coffee and liqueur mixture and layer on top, followed by the rest of the cheese mixture

Chill for 2/3 hours

Lightly whip the cream and spread over the top

Chill for a min. 1 hour or overnight

Dust with Cocoa powder & serve
