1 Cup of Self Raising flour
Half Teaspoon salt
Oil for shallow frying

Put flour in bowl and add salt
Mix with cold water until it's at dropping consistency
Put pan on medium heat with enough oil to a depth of 1 inch
Using a desert spoon, scoop 1 spoonful and drop into hot oil
cook 4-5 spoonfuls at a time ensuring there is enough space in-between to allow the mixture to expand
The cookies should be floating in the oil. The oil should be hot enough to fry the mixture immediately
Fry for 3 minutes until dark brown
Turn cookies over and fry for a further 3 minutes until dark brown
Test the centre with a knitting needle; if the needle remains clean the cookies are done. If not cook a little longer.
Remove form the pan and place on some kitchen towel to remove excess fat
When cooled break cookie in half and add a blob of jam
