1 whole chicken
1 green pepper
1 medium onion
1 can beef broth
1 can water
1 pkg. Taco Seasoning
1 can refried beans
Diced tomatoes
Diced avocado
Shredded jack or cheddar cheese
Rosarita enchilada sauce
Sour cream

In crock pot cook chicken, diced pepper, diced onion, broth, 1 can of water, and taco seasoning. Cook until chicken is tender. Remove chicken from liquid and cool. Shred chicken and add meat back into liquid and keep warm. In a warm tortilla, layer refried beans, meat mixture, tomatoes, and avocado. Fold tortilla and cover with enchilada sauce and cheese, Place in microwave or oven to melt cheese. Top with sour cream.
