1 lb. ground Italian sausage
1 c. chopped onion
2 cloves garlic, chopped
5 c. beef broth
½ c. water
½ c. dry red wine
1 large can diced stewed tomatoes
1 c. carrots, thinly sliced
½ tsp. basil
½ tsp. oregano
1 (8 oz.) can tomato sauce
1½ c. sliced zucchini
2 c. refrigerated tortellini
1 tbsp. chopped parsley
1 green pepper, coarsely chopped
freshly grated parmesan cheese

Directions:
Directions:
In large stockpot or pan, brown sausage. Remove from pan and set aside. Use sausage drippings to saute onion and garlic. Add broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring ot a boil. Decrease heat and simmer 30 mins. Stir in zucchini, tortelini, parsley and green pepper. Simmer, covered, for 35-45 mins. Serve topped with parmesan cheese.

If making ahead of time, add tortellini after the soup has been reheated, then simmer for 30 mins.
