8 tbsp. butter, room temperature
12 tbsp. sugar
zest of 1 lime, about 1 tbsp.
2 tsp. fresh lime juice
1 tsp. vanilla extract
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
4 tbsp. white chocolate chips (then throw in a few extra)
2 tbsp milk

Preheat oven to 350º. Prepare a cookie sheet with cooking spray. In a large bowl, beat together the butter and sugar until creamy. Add lime zest, juice, vanilla and mix. Mix dry ingredients in a medium bowl and add to wet ingredients until crumbly. Add milk and mix until dough is formed. Add white chips. Place spoonfuls on cookie sheet and flatten a little. Bake for 12 minutes or until edges are golden brown. Let cook for a minute or two and transfer to a cooking rack.

This is adapted from a recipe I found on the internet. Normally I'm not a fan of white chocolate, but this cookie is one of my favorites. The white chips and the lime make a good combination. (These are also quick and easy, which is a must for me.)
