Pecan Streusel Sweet Potato Souffle Recipe

Ingredients: 3 large cans sweet potatoes 3/4 cup light brown sugar 2 eggs 1 tbsp cinnamon 1 cup juice from canned sweet potatoes 1 stick of REAL butter (softened) 1 cup chopped pecans 3/4 cup self rising flour 3/4 cup light brown sugar Small bag of miniature marshmallows

Directions: |
Directions:Mix with hand mixer all three cans of sweet potatoes. Add 1/2 stick of softened butter, 3/4 cup light brown sugar and 1 tbsp cinnamon. Mix in 2 eggs. Add sweet potato juice a little at a time to desired consistency. Pour into PAM sprayed large casserole dish. To prepare topping you melt 1/2 stick of REAL butter. Mix together 3/4 cup self rising flour and 3/4 cup light brown sugar. Using a fork blend the melted butter into the flour/sugar mixture until crumbly. Sprinkle the chopped pecans onto the top of the sweet potato casserole. Then crumble the flour/sugar mixture on top of that. Bake at 350º for 45 minutes. About 5 minutes before the end sprinkle miniature marshmallows on top and let melt until slightly brown. Serve immediately. |
