2 T Oil
1 sm Onion, finely chopped
2 cloves Garlic, minced
1 tsp Ground Cumin
1 tsp Salt
Pepper to taste
2 C Tomatillos, drained with liquid reserved
1 lb Lean Pork Steak or Shops, in small cubes, or strips
2 or 3 canned jalapeņo chiles, rinsed, seeded, and cut into small strips
16 to 20 oz jar Nopalitos (green cactus pieces), drained and rinsed

Directions:
Directions:
Brown the meat well in the oil. Add onion, garlic, tomatillos, strips of chile, cumin, salt, pepper and nopalitos. ( Add some of the liquid from the tomatillos to the meat, if needed.) Simmer for 15 minutes. Serve with rice and tortillas.

I really like this variation of chile verde, and it takes less time in preparation. Even better with fresh nopalitos. With any of the basic pork stews one can add beans , lentils or potatoes.
