Salad:



1/2 head or less regular lettuce-torn
1 bunch or less Romaine lettuce-torn
2-4 celery stalks cut up
1 green pepper, diced
1 can mandarin oranges, drained
1/2 c sugared almonds* directions follow
2 plus tsp sugar
1/2 c sliced almonds




Dressing:



1/4 c oil
2 tbsp sugar
2 tbsp vinegar
salt,pepper to taste
1 tbsp parsley flakes, if desired

Directions:

Combine the lettuce/salad ingredients and set aside.

To make the sugared almonds:
Heat 2 plus tbsp sugar in a small pan, when the sugar liquifies, put in the almonds and stir until well coated. Be careful the sugar is VERY hot!
Pour the nut mixture on waxed paper to cool and dry.

Mix the dressing ingredients and place in refrigerator.

When ready to serve, combine the lettuce, almonds, and oranges the pour on the dressing and mix well. Dress the salad about 15 minutes before serving.

Make the almonds ahead of time.
The dressing also can be made ahead of time and refrigerated.
