2lbs cooking apples, peeled cored and sliced
1 Large onion, chopped
1 1/4 pt chicken stock
6oz stilton cheese

to finish:
1/2 pt single cream
salt and ground black pepper
fresh chopped parsley

Directions:
Directions:
Cook apples and onion in a large pan for 10 minutes, stirring until soft

Add stock, cook for 5 minutes

Liquidise or process with cheese until smooth

To serve immediately:

Return soup to pan, add cream
Reheat slowly, stirring, Do not boil,as cream will curdle
Season to taste, sprinkle with Parsley
