SALAD INGREDIENTS:
1 Fresh Cauliflower
2 Fresh Bunches Broccoli (2 1/4 lbs)
10 thin slices bacon
1 large red onion
1/3 cup dark raisins
DRESSING:
1 cup mayonnaise
1/4 cup sugar
2 tbsp cider vinegar
1/2 tsp. black pepper

Cut broccoli and cauliflower florets into smaller than bite size pieces. (I prefer to chop them so they are small pieces) Cut off the tough outer layer of the stalks and chop the tender part into small pieces too. You need approximately 8 cups of broccoli and cauliflower. (This can be done the day before and stored in a plastic bag.) Fry the bacon and set aside. (I like to actually cut my bacon into small pieces before I cook it. This is just a little time saver for all you busy ladies and gentlemen.) Slice the onion into long julienne strips. In a large bowl combine the broccoli, cauliflower, onion strips, raisins. In a small bowl, whisk together mayo, sugar, vinegar and pepper. Toss salad with dressing and refrigerate for at least 1 - 2 hours. Add the bacon pieces and toss once more to mix thoroughly before serving.
