2 1/2 c. boiling water
3 pkg. (4-serving size each) Cherry flavor gelatin
2 3/4 c. cold water
1 can (11 oz. or 15 oz.) Mandarin oranges, drained
4 oz. Cream cheese, softened
2 tbsp. sugar
1 tub (8 oz.) cool whip, thawed

Sir boiling water into jello in medium bowl at least 2 minutes until completely dissolved. Stir in cold water.

Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten eggs whites.) Reserve a few mandarin oranges for garnish. Gently stir remaining mandarin oranges into gelatin mixture.

Beat cream cheese and sugar in separate medium bowl with wire whisk until well blended. Gently stir in cool whip. Spoon into large serving bowl, cover with gelatin mixture.

Refrigerate 2 hours or until firm. Garnish with reserved mandarin oranges.
