1 1/2 c. cornmeal
1/2 c. all-purpose flour
1 c. sugar (yes - 1 cup)
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/4 c. shortening or bacon fat
1 cup buttermilk
2 eggs

Directions:

Heat oven to 450º. Mix all ingredients; beat vigorously 30 seconds. Pour into greased loaf pan. Bake until golden brown, 25-30 minutes.

You can also use a round layer pan, 9x1 1/2" inches or square pan, 8x8x2"

During the summer, I like to make this corn bread in our roaster oven. It makes a nice dark crust and doesn't heat the kitchen.

I recommend the bacon fat when making this recipe. It adds great flavor and a rich color to the top of the loaf.
