2 and 1/2 cups cooked beef cubes, meaning whatever is left of the roast beef, tenderloin, etc.
2 cups raw potato, chopped
1 medium chopped onion
1/3 cup butter
1/2 cup beef broth (I use double strength)
1/8 tsp thyme
dash garlic powder
1/2 cup red wine
1/2 tsp salt
1/8 tsp fresh ground pepper

Melt butter in a deep casserole dish. Toss in everything else and bake covered at 350 for an hour and a half, stirring occasionally.

I made this with leftover beef tenderloin roast and it was divine! I have also used standing rib. Great way to maximize a few leftovers for a really good hearty dish!
