1 cup butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 egg
1 cup vegetable oil
1 cup rolled oats, not instant
1 cup crushed corn flakes
1/2 to 1 cup shredded coconut (or can use mini-chocolate chips as a variation!)
1/2 to 1 cup well chopped pecans (or not...you decide!)
3 1/2 cups sifted flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract

preheat oven to 325. Cream butter and sugars together unitl light in color. Add egg and oil. Sitr in oats, corn flakes, coconut or chocolate chips, and nuts. Blend in flour, soda, salt, and vanilla.
Roll into balls about the size of large olives Place on ungreased cookie sheet and press flat with a fork. (helps to dip fork in cold water as you go). Bake around 12 minutes

These practically melt in your mouth. I confess I have never made them with the chocolate, but I am sure they are delicious either way!
