2 cups all purpose flour
1/2 cup sugar
1/2 cup light brown sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 apple, cored, peeled, and shredded
2 carrots, shredded
1/2 cup raisins
1/2 cup coconut
3/4 cup crushed pineapple
1/2 cup pecans
3 eggs, beaten
1 cup vegetable oil
2 tsp vanilla

Preheat oven to 350. Sift dry ingredients, then add apples, carrots, raisins, coconut, pineapple, and nuts, mixing well. Add remaining ingredients, mix, and pour into greased muffin pans. Bake for about 25 minutes and then let stand for about 5 minutes.

My mother, Carma Burton, loves these! I amended the original recipe to use some brown sugar in place of some of the white, and added the pineapple.
