10 large eggs
1 lb bulk pork sausage browned
1 pkg frozen hashbrowns
1/4 cup vegetable oil
1/2 ricotta Cheese
1 cup shredded cheddar cheese
Salt and Pepper to taste

Directions:
Directions:
Preheat Oven to 350º. In a large skillet heat oil and add potatoes. Cook until golden brown.

In a medium bowl break eggs and add ricotta cheese. Add salt and mix

In a 13 x 9 baking sheet layer potatoes, browned sausage, egg mixture and top with shredded cheese.

Bake for 30 min. or until the casserole is firm. Cool before serving.
