4 small burpee seedless cucumbers
8 red new potatoes
2 tbsp. oil
6 tbsp. vinegar
12 tbsp. cold water
1 tbsp. sugar
2 1/2 tbsp. sea salt
1 small red onion, sliced thin
Salt and pepper to taste
1/2 tsp. of dill
1/2 tsp. of parsley

Directions:

Peel and slice cucumbers and red onion into thin slices. Add 1 cup water, and a half cup of ice and 2 tbsp sea salt and let set for 20 minutes.
In a glass add 12 tbsp. cold water, 1 tbsp. sugar, 1/2 tbsp. sea salt and stir until salt and sugar have dissolved. Add 6 tbsp. vinegar and stir. Add pepper a 1/2 tsp. of dill and/or 1/2 tsp. of parsley and stir. Add oil and stir again.
Drain water and ice mixture from cucumbers. Add ingredients.
Let set for 30 minutes before serving at room temperature.
