1 9- inch unbaked pie crust
1 Cup shredded cheese of choice
6 slices bacon, cooked and crumbled
3/4 c diced ham (optional - or any meat)
2 green onions chopped
1/2 green pepper (optional)
3 eggs, slight beaten
1 Cup milk (whole milk best but whatever)
1/2 tsp salt
1 tsp mustard
1 tsp grated lemon peel (optional but good)

Directions:
Directions:
Prick the pie crust and bake for 5 minutes at 425 degrees. Remove and arrange cheese, meat and green stuff in pie crust. Mix together eggs, lemon peel, salt and mustard, milk in bowl. Pour over meat etc. and bake at 325 for 45 minutes or until set. Remove from oven and let stand 10 minutes before serving.

Quiche is a good way to use left overs. You can omit the crust if needed, or use a biscuit mix crust. Uses vegetable also if you have them left over.
