2 pounds pork loin, cubed, 1 tbsp vegetable oil, 4 C. chicken broth, divided, 3 11oz-cans whole kernel corn, drained, 2 celery ribs, diced, 2 med. potatoes, peeled and diced, 2 med. tomatoes, diced, 2 or 3 cans chopped green chilies, 2 tsp ground cumin, 1 tsp. dried oregano, 1 tsp. salt, optional, 3 tbsp corn starch

In 5-qt. dutch oven brown pork in oil. Add 3 1/2 C broth, corn, celery, potatoes, tomatoes, chilies, cumin, oregano and salt, if desired: bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat and vegetables are tender.
Combine corn starch and remaining broth; stir into stew. Bring to boil; cook, stirring constantly, until thickened. Serve with corn bread or tortillas.
