1 to 1 and 1/2 pcs whole grain bread, toasted
1/4 cup loosely packed flat leaf parsely (can use regular too, or even dried)
1 clove minced garlic
1/2 tsp lemon zest (yellow part only)
1/8 tsp fresh ground black pepper
1/4 cup light mayo
1 and 1/2 to 2 pounds tilapia (4 good size pcs)
2 tsp fresh lemon juice, or more!
olive oil spray (optional)

Heat oven to 425. In a mini-processor or blender, pulse bread til small crumbs form. I like the bread toasted. Set aside. Stir up with parsley, garlic, lemon zest, pepper and mayo. Place tilapia pcs on a baking sheet covered with nonstick foil. Sprinkle each pc with lemon juice. Spread mayo mix evenly over each pc. Sprinkle the top with the bread crumbs. Lightly spray top with olive oil, if desired. Bake 15 minutes or until fish flakes with a fork at the thickest part.
