5 Tbsp cornstarch
2 c. water
1 c. sugar
1/4 t. salt
3 egg yolks, beaten
3 Tbsp. butter
5 Tbsp lemon juice (approx 1 1/2 lemons)
2 t. grated lemon rind
1 baked pie shell


Meringue:
3 egg whites
6 Tbsp. sugar
Directions:
Directions:
Blend cornstarch, sugar and water. Place in double boiler and boil until thick, add a small amount egg yolk at a time, stirring constantly till all in. Boil 2 minutes. Remove from heat, add butter, rind and juice. Cool and place in pie crust.
Meringue:
Beat 3 egg whites till stiff. Gradually beat in 6 tablespoons sugar. Pile on pie. Bake at 350º for 15 minutes or until lightly browned.

This is a wonderful pie! I got the recipe from a cookbook that my dear friend Dottie Smith gave me. It was put out by Hoegemeyer Seeds. When I went back to mark the recipe, I discovered that the recipe is one that came from Phyllis Vanosdall in Scotia. Phyllis is related to the Dwinell side of the family.
