Large tin crushed pineapple
Large Orange (juice and grated rind)
2 Teacups white breadcrumbs
4oz Demerara Sugar
3oz Butter

Directions:
Directions:
1 Crush Pineapple or chop finely
2 Grate & squeeze juice of orange
3 In a deep, fireproof dish, put alternate layers of breadcrumbs Brown Sugar, Grated orange rind, melted Butter & Pineapple
4 Sprinkle each layer with Orange and Pineapple juice
5 Finish with a layer of breadcrumbs and a little sprinkling of sugar
6 Bake in a moderate oven for 30 minutes, or until golden brown on top.
7 Dust with Castor Sugar
8 Serve with Cream or Custard.Surplus juice can be served at the table.
