1 lb Crab Meat
1/2 Red Bell Pepper finely chopped
3 scallions finely chopped
1 lemon, zest & juice
6 fresh basil leaves cut into thin strips
1/2 cup Hellman's Mayo
1/2 tsp. sea salt
1/2 tsp fresh ground pepper
2 eggs beaten
pinch of cayenne pepper
1 cup Panko Bread Crumbs

Directions:
Directions:
mix all of the ingredients except crab and bread crumbs. Then add crab meat and gentle fold into mixture. Place Panko Bread crumbs into a bowl. Dip crab cake into bread crumbs and fry in 1/2 olive oil & 1/2 canola oil for about 3 min per side or, until golden brown.
