Make tomato sauce 2 to 4 hours ahead:

4 ripe, large tomatoes, cut into 1/2 inch pieces
1/2 lb. Brie, rind removed, cut into small pieces
1/2 c. fresh basil leaves, cut into small strips
3 garlic cloves, peeled and finely minced
1/2 c. olive oil
1 heaping tsp. salt
1/2 tsp. fresh ground pepper

1 lb. pasta of your choice
Parmesan cheese

Directions:
Directions:
Mix ingredients. Set in covered bowl on counter for 2 - 4 hours. Do not refrigerate. Room temperature allows the cheese to mellow.

Cook 1 lb. pasta according to package directions. Mix sauce with pasta and serve imediately with Parmesan cheese to taste. Serves 4 - 8 depending on whether it's a side dish or the main dish.

Helpful tip: Put the Brie in the freezer for 10 - 15 minutes to more easily remove the rind.
