SLAW:

5 c. cole slaw mix
1/4 c. chopped red onion
1 (11 oz.) can Mexicorn, drained
1 c. shredded Cheddar cheese

DRESSING:

3/4 c. Ranch salad dressing
1 T. fresh lime juice
1 tsp. cumin
2 jalapeno chiles, seeded and finely diced
2 T. chopped fresh cilantro

Directions:

In large bowl, combine all salad ingredients. Mix well. In small bowl or shaker jar, combine all dressing ingredients; blend well. Pour over salad and toss to coat. Serve immediately or refrigerate until serving time.

I think this is best when made one day ahead. Just omit the cheese and add it before serving. Don't forget to wear rubber gloves when handling the jalapenos!
