1 cup self-rising corn meal
3 eggs, slightly beaten, or equivalent egg substitute
1/2 cup corn oil
8 ounces sour cream (I use nonfat)
1 can cream style corn

Mix all ingredients together and pour into deep corning wear type casserole. Bake uncovered at 350 for about 45 minutes, or until pudding has risen and is slightly golden on top
