6 Slices of bacon, cooked, drained and crumbled
1/2 cup peppers (red & green) okay to use frozen
6 eggs
1/2 cup Cream Cheese spread-softened
1 cup Mexican Style Shredded cheese Divided

Directions:
Directions:
Preheat oven to 400 F. Beat eggs and cream cheese with wire whisk until all is blended.
In a 10 in cast iron skillet spray with cooking spray. Add the mixed peppers and cook until there are tender. Add bacon, egg mixture and 3/4 of the shredded cheese and stir. Cover Skillet with a lid. Reduce heat to low and cook for about 7 minutes or until the egg mixture is set.
Remove lid and place the skillet in the oven. Top with the remaining 1/4 cup of cheese and cover with lid. Let stand for 2 minutes before serving.
