1 tablespoon plus 1 teaspoon butter
2 tablespoons plus 2 teaspoons flour
1/2 teaspoon powdered mustard
1/4 teaspoon rubbed sage
1 1/2 cups skim milk
1 packet chicken instant broth and seasoning mix
dash of pepper to taste
4 ounces cheddar cheese, shredded
8 ounces skinned and boned cooked chicken, diced
1 cup each sliced carrots, sliced mushrooms, and sliced green beans
4 ready-to-bake refrigerated buttermilk biscuits ( 1 ounce each )

In a 3 quart saucepan heat butter over medium heat until bubbly and hot; add flour, mustard, and sage and stir quickly to combine thoroughly. Stirring constantly, gradually add milk, continue to stir and cook until smooth. Add broth mix and pepper and mix well. Reduce heat to low and cook; stirring occasionally, until mixture is thick, 5 to 10 minutes; add cheese and cook, stirring, until melted. Add chicken and veggies and continue cooking until chicken and veggies are heated through, 3 to 5 minutes longer.
Preheat oven to 400 degrees. Spray 1 1/2 quart casserole dish with non stick cooking spray ( Pam ) and carefully pour mixture into casserole. Carefully separate each biscuit into 2 layers of dough, making 8 circles, arrange biscuits over chicken mixture in an even layer, overlapping circles slightly. Bake until biscuits are golden, 7 to 10 minutes.

Discovered this Weight Watcher recipe in one of their cookbooks years ago when my kids were still in middle school and the whole family liked it....Rock and I could stay on our diet ( that day ) and the kids were happy with it too.
I continued to make it even when not actively dieting.
