2 cups fresh corn or frozen defrosted
1 cup grated cheddar cheese
2 tbsps chopped scallions
1 cup soft breadcrumbs
2 tbsp melted butter
1/4 tsp each of salt, pepper, ginger
1/4 cup light cream
dash of cayenne optional

Directions:

Combine all ingredients and turn into a buttered 1 quart casserole. Bake in 350º oven for 45 min.
