! 1/2 lbs.beef rib steak or tenderloin
1 tablespoon plus 1 teaspoon butter
1/4 cup green onions
2 garlic cloves
2 cups sliced mushrooms
1 cup hot water
dash of salt and pepper
1 tablespoon flour
2 teaspoons Dijon style mustard
2 teaspoons tomato paste
2 packets instant beef broth and seasoning mix
3 tablespoons sour cream
2 tablespoons chopped fresh parsley
2 cups cooked noodles

Directions:
On rack in broiling pan broil meat 2 inches from the heat source, turning once, until rare; set aside.
In 9 inch skillet heat butter until bubbly and hot; add onions, garlic and saute briefly, about 1 minute ( do not brown ). Add mushrooms, salt, and pepper and cook; stirring occasionally, for 3 minutes. Sprinkle with flour and stir quickly to combine; gradually stir in water. Add mustard, tomato paste and broth mix and cook over medium heat, stirring constantly, until mixture is slightly thickened. Reduce heat, add sour cream and parsley and stir to combine. Cut steak on the diagonal into 1/2 inch thick slices and add to sauce mixture, cook just till heated through. Serve over hot noodles.

This is an old W.W recipe but its the only stroganoff one that I use. I make this even when we are not dieting...its very tasty and actually easy to do if you have all the ingredients ready to go when you start it.
