1/3 c vegetable oil
1 1/2 yogurt (use vanilla flavor for great flavor!)
3 c flour
2 tbsp baking powder
6 tbsp sugar
1 1/2 tsp salt

Directions:
Directions:
Mix the liquid ingredients (except milk) together until smooth. Sift dry ingredients together and add slowly to the liquid. Add milk as you go - just enough to make it look like pancake batter consistency. Cook on the griddle at 350º until edges appear to cook and become dry and then flip. The old "watch the bubbles" rule for pancakes doesn't seem to work on these, because they are much thicker consistency than most pancake batters. Be ready for a little trial and error. Try eating these without syrup at first - they are sweeter than most pancakes.

In my experience, most pancakes are little more than an excuse to put all that stuff (syrup, brown sugar, powdered sugar, etc...) on top and eat them at 7:00 a.m. These are very different - heartier and much more flavorful. Recommend trying these with some apple butter, applesauce, or maybe a light dusting of powdered sugar.
