3 C chopped or grated raw apples
1 1/2 C vegetable cooking oil
2 C sugar
3 eggs
2 1/2 C sifted flour
1 tsp salt
1 tsp soda
2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
1 C chopped walnuts

Sugar Glaze
1 1/2 C sifted powdered sugar
3 T water
2 tsp vanilla extract
Add more water if too stiff

Peel apples, chop and set aside. Pour oil into large mixing bowl. Add sugar and eggs, beat well. Sift flour with salt, soda, baking powder, and cinnamon. Gradually add flour to creamed mixture. Add vanilla. Fold in apples and nuts. Pour batter into well greased bundt pan or tube pan. Bake at 350 for 1 to 1 1/2 hours or until deep golden brown. When cool, remove from pan and drizzle with glaze.
