5c. water
3c. cubed potatoes
1 sm onion, chopped or 1 T dried onion
2 T. Parsley flakes
20-oz pkg. frozen mixed vegetables
2 cans cream of chicken soup, undiluted
1 lb. Velveeta cheese, cubed (no substitute)

Directions:
Directions:
Boil potatoes in 5 cups water until only slightly cooked. Do not drain. Add onion, parsley, mixed vegetables (that have been slightly cooked), soup and cheese. Heat all together on low heat until cheese is melted. Be careful not to scorch. Can be reheated. Keeps well in refrigerator. Makes about 10 cups.
