1 lb. boneless chicken cut up into 1/4 cubes
1 tbsp starch
1/2 tbsp sugar
21/2 tbsp soy sauce
4 thin slices ginger
2 green onions sliced
1/2 c cashews

Directions:
Directions:
Combine starch, sugar and soy sauce and pour over chicken to marinate for 10 minutes.

Heat 3 tbsp oil in pan until hot

Stir in ginger quickly and add chicken.
Stir fry about five minutes
Poke chicken with chopstick. If liquid is clear it is done.

Add cashews and green onions.
Serve hot.
