2 pound boneless pork loin roast
2/3 cup maple syrup (the real stuff)
3 tablespoons Dijon-style mustard
2 tablespoons cider vinegar
2 tablespoons light soy sauce
Salt and pepper to taste

Directions:
Directions:
Stir together all ingredients into a sauce (except pork). Spread 2 Tbsp of sauce evenly over roast and place in shallow baking pan. Reserve rest of sauce for continued basting. Baste roast with reserved sauce every 20 minutes. Bake at 325º until internal temperature reaches 150º, approximately 45 minutes to 1 1/2 hours. Remove roast from oven and let rest for 10 minutes before slicing to serve. Heat remainder of sauce to boiling and serve with roast. Serves 6
