Directions:
Combine: 2 cups flour (I use spelt flour)
4 tsp Baking powder
3 tsp. sugar
½ tsp salt

Cut in ½ cup shortening (or butter) until mixture resembles coarse crumbs.

In small bowl, beat: 1 egg
2/3 cup milk

Stir egg mixture into dry ingredients just until moistened (batter will be sticky). Turn onto a well-floured surface; knead 20 times. Roll to ¾” thickness; cut with a 2-1/2” cutter (I use a pizza cutter to divide). Place on lightly greased baking sheet.

Bake at 450 degrees for 8 to 10 minutes or until golden brown.
Serve warm with butter and honey or jam. Also make superb biscuits for strawberry shortcake!
